Not all Asian American restauranteurs in California fall under the common tropes of General Tso’s chicken and sashimi. Some are more familiar with sesame buns and beef patties than pulling noodles. Many of the most beloved Asian-owned restaurants in the Bay Area serve burgers, doughnuts and pizza. Eateries like Beep's Burgers (1) in San Francisco and Delegates in Oakland (2) are neighborhood staples, and they’re all run by Asian Americans.
Chronicle Food restaurant critic Soleil Ho recently published an ode to Asian American-owned diners, burger joints and sandwich shops: "We hold up the chef-artist who crafts tongue-blistering chile fish or aggressively cartiliginous sisig as an exemplar of realness," Ho writes. "But in California, so many stories go against that grain." Here you’ll see East and Southeast Asian immigrant restauranteurs, like Justin Chang (3), building lives around doughnuts, hash browns and hamburgers. Chang grew up eating hash browns, eggs and bacon, and it’s Asian Americans like him who have had a big role in developing the definition of American cuisine in the state.
